Dominicans make wonderful drinks from the juice of every fruit. The best are passion fruit, guava, gooseberry, cherry, and apricot. Some of the more unusual include soursop, pawpaw, seamoss, beet, and gingerbeer. Try them all. Most are said to have excellent health benefits.
The cultural center is in a converted sugar mill on the grounds of an old plantation, and the original water wheel that was used to drive the sugar press is still there. The runway at Canefield Airport now cuts through land once planted with sugar.
