Sugar Mill rooms are located near the remains of an 18th-century sugar mill on the secluded white-sand beach. They are spacious with king or twin beds, a large bathroom with a dressing area, and a private terrace. The callaloo soup is rich with coconut milk, and the freshly caught fish is grilled with an excellent combination of spices. Waitresses wear colorful madras skirts and headdresses, waiters are decked out in white shirts with red cummerbunds and bow ties. They re friendly and cheerful, but can be inattentive on a busy night. No matter. The food and atmosphere make up for less than snappy service. The dining room is casual and relaxed with stone walls, wooden rafters and floors, madras tablecloths, and plenty of tropical plants.
